Sea Level Cain is Cain Velasquez at his best - at sea level. Cain Velasquez is known for having great cardio, but when he fought in Mexico City, which is at very high altitude, he gassed out early and lost to Fabricio Werdum. People think it must have been the altitude, so Sea Level Cain is born.
Between rounds of Melvin Guillard vs Ronys Torres at UFC 109, a bag of ice cubes broke inside the octagon spilling all over. Officials tried to hastily clean up the ice, but knocked over the collection bucket, re-spilling the ice several more times. Then they attempted to sweep the ice through the side fencing and nearly left ice in the cage before starting the next round. Joe Rogan was on commentary and hilariously made fun of the ice situation.
Joe Rogan: "Wow look at all the ice all over the octagon. Oh that's a problem, someone spilled ice in the octagon... (about the cleanup effort) they knocked the bucket over, three stooges, what are you freaks doing? Everybody's booing."

During the UFC "Go Big" press conference, when RDA and Cerrone were asked if they would fight Conor McGregor instead of each other, Conor retorts with "I change your bum life... it's a celebration... you call your wife, 'We're rich baby, break out the red panties...' It's red panty night when you fight me!" When other fighters take on Conor McGregor, it is usually a big earning opportunity for them, so "Red Panty Night" is considered a real thing. The phrase can be used in other contexts such as any time something really good happens, especially involving money.
1. Dude, I got a raise today, so looks like it's red panty night at my house tonight. 2. I won $100 dollars on my lottery ticket! Woohoo! Red Panty Night!

Early in Dustin Poirier's career his hair was in a buzzcut, but at some point he grew his hair a bit and added a little bit of style, saying that one advantage he has over his opponents is that his hair is "Salon Quality". UFC fans believe Poirier has performed better since receiving his new haircut, and have nicknamed the new iteration of Dustin "Salon Quality Poirier".
Dustin Poirier: "I'm a better boxer, I can scramble better, better Jui Jitsu, longer, faster, I can dance better, better looking, my hair is salon quality."

For situations when a fighter is losing very badly and appear to be taking damage with no chance of winning, and yet the referee does not stop the fight, the ref is assumed to be thinking "If he dies, he dies". Khabib Nurmagomedov literally wrestled with bears when he was young. Nurmagomedov grew up in Dagestan, where as a nine year old boy, his father led him out towards the edge of the forest, where a bear cub was chained to a nearby tree. His dad then turned on a handheld camera, pointed it at his son, and ordered him to the wrestle the animal. Khabib, even at that young age displayed technique and heart.
